Farmer's Market Quinoa with Cucumbers, Tomatoes, and Feta
INGREDIENTS:
1 c. quinoa
2 chicken breasts (shredded)
1 cucumber
1 tomato
1 lemon's worth of lemon zest
Garlic dill (to taste - I used a lot because my dill plant had overgrown!)
Feta cheese (about 1-2 tbsp.)
2 tsp. olive oil
Cracked pepper
Sea salt
DIRECTIONS:
Measure 1 c. of quinoa (dried) and rinse it well. Then combine with 1.5 cups of water in a medium sauce pan. Bring to a boil and then turn down to simmer for about 10-15 minutes.
While the quinoa is cooking, dice the tomato and cucumber and zest the lemon. Once the quinoa is ready, add it to the cucumber, lemon, and tomato mixture and shredded chicken. Coat with olive oil and season with cracked pepper and sea salt and finally mix in the feta cheese. It tastes great warm or cold!
